Sabor Barranquilla 2025, the premier culinary festival of Colombia’s Caribbean, embraces the theme “La cocina es VIDA” (“Cooking is Life”) and the complementary slogan “De la tierra nace el sabor que nos une” (“From the earth springs the flavor that unites us”) . The event takes place from August 21 to 24 at the Centro de Eventos Puerta de Oro in Barranquilla. Organized by the Cruz Roja Colombiana Seccional Atlántico, Fenalco Atlántico, and Corferias—with support from Gases del Caribe, Imusa, Fontur, and MinCIT—it underscores the link between cuisine, identity, and sustainability .
This edition brings social and environmental awareness into the spotlight: food is presented not just as nourishment, but as storytelling, environmental care, cultural heritage, and community building .
A Tribute to Millo & Culinary Exchange
A major highlight is the tribute to millo, a traditional grain deeply rooted in the culture of Atlántico and Cesar, especially around Juan de Acosta and Valledupar regions. This ingredient serves as a symbol of ancestral memory and agri‑biodiversity—featured in dishes like arepas, bollos, natillas, chichas and more .
Valledupar takes center stage as the guest city of 2025, bringing its culinary traditions and music culture to Barranquilla. Its participation further cements the festival’s aim to showcase the richness of the Gran Caribe .
Over 100 chefs and more than 100 exhibitors will take part—including five international chefs from the UK, Peru, Ecuador, and Argentina—who will champion sustainable cooking, highlighting local seafood, mangrove products, and Caribbean forest fruits, often using traditional ingredients in innovative preparations like omakase and Nikkei fusion .
